CINNAMON APPLE CREAMED HOT CEREAL – paleo recipe

Serves 6-8 When I was growing up, my favorite breakfast was cream of wheat cereal. Cream of wheat was tiny bits of wheat cooked with milk. Now I realize that a dinosaur couldn’t eat that! Still, sometimes you want to eat things even if it’s not healthy for you. Then one day as a birthday present, my boys made me this recipe and made me so happy! It tastes just like my cream of wheat breakfast, but only contains the healthy part! It was so good! Hope you love it, too! INGREDIENTS • 2 C (35°F) raw walnuts • 1 C (35°F) raw macadamia nuts • 1 C (35°F) medjool dates, pitted and halved • 2 apples, peeled and diced • 1 Tbsp (15 ml) coconut oil • 1 Tbsp (15 ml) ground cinnamon • 2 C (35°F) almond milk • 1 14 oz (397 g) can full fat coconut milk INSTRUCTIONS AND HOW KIDS CAN HELP 1. Combine nuts and dates in a food processor until ground into a fine meal, about 1 minute; set aside. 2. Sauté apples over medium heat in coconut oil until lightly browned, about 5 minutes. 3. Add nut and date mixture and cinnamon to apples and stir to incorporate, about 1 minute. 4. Reduce heat to low and add coconut and almond milk. 5. Stirring occasionally, let mixture cook uncovered until thickened, about 25 minutes. 6. Serve warm; store chilled in an airtight container for up to a week or two.

Cinnamon apple creamed hot cereal is a grain-free answer to the cream of wheat breakfasts of childhood. Ground walnuts, macadamias and dates cook with browned apples and cinnamon into a warm, creamy bowl. It was invented as a birthday breakfast — and it delivers every bit of the nostalgia.

Pro Tips

  • Process the nuts and dates to a fine meal before anything else — a full minute in the food processor — or the cereal turns out pebbly instead of creamy.
  • Take five minutes to sauté the apples until lightly browned; that caramelization is where the depth in this bowl comes from.
  • Cook it uncovered on low, stirring occasionally, for about 25 minutes until it thickens — covering it makes it gluey.
  • Serve it warm, straight from the pot; the texture is at its creamiest in the first few minutes.
  • It keeps chilled in an airtight container for up to a week or two, so a big pot means instant breakfasts.

Frequently Asked Questions

Can I make this hot cereal ahead of time?

Yes — it keeps chilled for up to a week or two. It thickens in the fridge, so reheat with a generous splash of almond milk to bring it back to porridge consistency.

What does it taste like?

Cream of wheat, believe it or not — warm, creamy and cinnamon-scented, with soft apple pieces throughout. The nut-and-date base does all the work.

Can I use different nuts?

The walnut and macadamia pairing is what mimics that mild, creamy cereal flavor. Pecans work in a pinch, though the bowl tastes nuttier and less like the original.

Is it filling enough for breakfast?

Very much so — between the walnuts, macadamias and coconut milk it's a high-fat, high-energy start that keeps you going for hours.
