Breakfast paleo casserole is the weekend workhorse — sausage, sweet potato, spinach and eggs baked into one golden pan. Sliced tomatoes finish the top like a savory sunrise. Cut it into squares and breakfast for eight (plus leftovers) is handled.

Pro Tips

  • Cook the sweet potato in the reserved sausage grease — those 15 minutes of frying build the flavor the whole casserole stands on.
  • Dice the sweet potato small so it turns tender in the skillet before it ever meets the oven.
  • Spread the sausage-veggie mixture evenly before pouring the whisked eggs over it, so every square gets equal filling.
  • Bake at 375 degrees for about 25 minutes, then give the dish a minute to set — the glass pan stays dangerously hot when it comes out.
  • Cut it into serving squares right in the dish; the thin tomato slices make clean portions easy.

Frequently Asked Questions

Can I assemble this casserole the night before?

Yes — layer everything except the tomatoes in the greased dish, refrigerate overnight, then pour the eggs over and bake in the morning. Add 5 minutes to the bake time.

Does it freeze well?

Very well. Bake it, cut into squares, and freeze the portions individually. Reheat from frozen in the oven or microwave for fast weekday breakfasts.

Can I use turkey sausage?

Absolutely — brown it the same way, and add a spoon of coconut oil to the pan if it renders very little fat for the sweet potatoes.

How long do leftovers keep?

Several days in the fridge, covered. The squares are just as good cold or gently reheated.
