Creamy Vanilla Chia Seeds – creamy vanilla chia seeds

Creamy vanilla chia seeds is the thick, pudding-like breakfast that tastes like dessert and behaves like fuel. Chia seeds cook with almond milk and coconut oil until luxuriously creamy, then fold with Greek yogurt and vanilla for tang and sweetness. Under 2.5g net carbs per serving — chill it well and dig in.

Creamy Vanilla Chia Seeds

(Total Time: 15 MIN| Serves: 2)

Ingredients:
3 tbsp chia seeds
2/3 cup (720 ml) unsweetened almond milk
2 tbsp (30 ml) Greek yogurt
2 tbsp (30 ml) coconut oil

Spices:
1 tsp (5 ml) swerve
1 tsp (5 ml) vanilla extract
¼ tsp salt

Directions:

  1. Plug in the instant pot and press the ‘’Sauté’’ button. Pour in the milk and add chia seeds. Cook for 5 minutes, stirring constantly.
  2. Now add coconut oil and sprinkle with swerve, vanilla extract, and salt. Give it a good stir and pour in about ¼ cup of water.
  3. Continue to cook for another 3-4 minutes.
  4. When done, press the ‘’Cancel’’ button and stir in Greek yogurt.
  5. Optionally, top with some fresh strawberries or seeds. Transfer to serving bowls and chill well before serving.

Pro Tips

  • Stir constantly for the first 5 minutes — chia seeds thicken fast and stick to the pot if left unattended.
  • Add the coconut oil and vanilla after the seeds have thickened so the flavor stays bright rather than cooking off.
  • The splash of water (about 1/4 cup) loosens the pudding to just the right spoonable consistency — don't skip it.
  • Stir the Greek yogurt in only after Cancel is pressed, and chill the bowls thoroughly before serving.

Frequently Asked Questions

Is this chia pudding keto?

Very much so — 2.4g net carbs with 7.8g of fiber and 22.5g of fat per serving, sweetened with swerve.

Can I eat it warm?

The recipe says chill well before serving, and the thick, creamy texture is at its best cold. It's also lovely warm on a winter morning.

What toppings work?

Fresh strawberries or a sprinkle of seeds are the recipe's suggestions — both add welcome texture to the creamy base.

How long does it keep?

Up to 4 days in the fridge. The chia continues to thicken as it sits, so stir in a splash of almond milk before serving.
