Broccoli ham and pepper frittata makes mornings easy — one buttered pan, layered vegetables and ham, and a rich cheddar custard that sets in the Instant Pot. The green peppers sweeten as they steam, the broccoli keeps its bite, and every slice carries 28g of protein. Brunch, solved.
Broccoli Ham and Pepper Frittata
(Total Time: 35 MIN| Serves: 4)
Ingredients:
2 tbsp. Butter
1 cup (240 ml) Green Bell Peppers (sliced)
8 ounces Ham (diced)
2 cups (480 ml) Broccoli (frozen)
4 Eggs
1 tsp Salt
1 cup (240 ml) Half & Half
2 tsp Ground Black Pepper
1 cup (240 ml) Cheddar Cheese (grated)
Directions:
- Grease a 6x3 inch pan with butter, making sure that all corners are well buttered.
- Layer the green bell peppers, then ham, then broccoli in the pan.
- Place eggs and salt in a bowl and whisk well. Add the half & half, pepper and cheddar, and stir well to combine.
- Pour the eggs mixture into the pan over other ingredients, and cover with a silicone lid or tin foil.
- Pour two cups of water in the inner liner of Instant Pot. Place a steamer insert in it and then the pan.
- Place and lock the lid, and manually set the cooking time to 20 minutes.
- When done let naturally release the pressure for 10 minutes and then quick release it.
- Remove the pan from Instant Pot, uncover and leave to rest for 10 minutes.
- Tip over on a serving platter and serve.

Pro Tips
- Dice the ham and slice the peppers to roughly the same size so every forkful gets an even mix of salty and sweet.
- Frozen broccoli works perfectly here and is what the recipe calls for — no need to thaw it before layering.
- Cover the pan with a silicone lid or foil before it goes in the pot; the trapped steam sets the custard evenly from all sides.
- Tip the cooled frittata out onto a serving platter for the classic presentation — the layers show beautifully when sliced.
Frequently Asked Questions
What size pan do I need?
A 6x3-inch pan that fits inside your Instant Pot on the steamer insert. Grease it thoroughly before layering.
Can I bake it in the oven instead?
Yes — bake at 350°F until the center is set, roughly 30–35 minutes depending on your pan's depth.
How long does it keep?
Up to 4 days refrigerated. It's a natural meal-prep breakfast that reheats beautifully or eats cold.
Can I swap the ham?
Cooked bacon or diced chicken both work well — anything savory and already cooked that won't release extra liquid into the custard.
