Barbecue Sauce

1 tablespoon extra-virgin olive oil

Вј cup chopped onion

3 cloves garlic, peeled and minced

One 14ВЅ-ounce can diced tomatoes

1ВЅ cups chicken stock

ВЅ cup carrot juice (optional)

Вј cup apple cider vinegar

2 tablespoons honey (optional)

1ВЅ tablespoons yellow mustard

1 tablespoon Worcestershire sauce

1 tablespoon chili powder

1 teaspoon balsamic vinegar

1 teaspoon freshly ground black pepper

ВЅ teaspoon salt

  1. Heat the oil over medium heat in a medium saucepan, and then sautГ© the onions and garlic for about 2 minutes.
  2. Add the remaining ingredients and bring to a boil. Cover, reduce the heat and simmer for 20 minutes, stirring occasionally.
  3. Pour the mixture in a blender (or use an immersion blender) and puree until smooth.

NOTES: Always be careful when putting hot liquid in a blender. If you desire a thinner sauce, thin to your desired consistency with added stock or water.
