WATERMELON ICE POPS – paleo recipe

Makes 4 If you’re like us, you probably have watermelon leftover after you’ve purchased a whole big melon. When it’s been sitting in the refrigerator for a couple of days or so, the remaining pieces get really juicy—it’s a perfect time to use them for making these ice pops. We like to use Enjoy Life dairy-free, soy-free mini chocolate chips to make the ice pops look like they have watermelon seeds in them, but you can freeze them without the chocolate or add any chopped fruit you have available. It’s a wonderful fruity and colorful base for whatever your imagination can think up! INGREDIENTS • 2 C (35°F) very ripe and juicy watermelon • 1/3 C (35°F) mini chocolate chips INSTRUCTIONS AND HOW KIDS CAN HELP 1. Remove any seeds and chop watermelon into 1- to 2-inch chunks. 2. Purée watermelon in a blender or food processor until very smooth. 3. Pour evenly into 4 ice pop molds, careful to not overfill. 4. Distribute chocolate chips by sprinkling on top of ice pop molds. 5. Gently stir in chocolate chips, ensuring they are distributed throughout popsicle. The chips should not sink to the bottom of the molds; the pulp of the watermelon will help them stay where they are “put” by being stirred. 6. Freeze for several hours, until the ice pop is easily released by pulling on the stem (a quick dip in warm water will help).

Watermelon ice pops are the smartest thing to do with the last juicy wedges of a big melon. Puréed watermelon and mini chocolate chips freeze into pops studded with fake watermelon seeds. Two ingredients, no molds to fuss over, and kids can make them start to finish.

Pro Tips

  • Use watermelon that's been in the fridge a couple of days — overripe, ultra-juicy melon purées into the sweetest, smoothest pop.
  • Purée the melon until very smooth before pouring; stringy pulp makes for icy, uneven pops.
  • Stir the chocolate chips gently through the filled molds — the watermelon pulp holds them in place, but only if you distribute them before freezing.
  • Don't overfill the molds; a quick dip in warm water releases the finished pops cleanly from the stem.
  • Enjoy Life dairy-free, soy-free mini chips look just like watermelon seeds, and chopped fruit works as a topping too.

Frequently Asked Questions

Why do all the chocolate chips sink to the bottom?

They need to be stirred through the purée once it's in the molds. The thick watermelon pulp will hold them suspended if they're distributed evenly before freezing.

Can I make these without chocolate?

Absolutely — plain watermelon pops are refreshing on their own, or drop chopped fruit into the molds for a different look every time.

How long do they need to freeze?

Several hours, until the pop releases easily with a pull on the stem. A quick dip of the mold in warm water speeds things along.

What kind of watermelon works best?

Very ripe and juicy — the kind that's been sitting in the fridge for a few days. It's the perfect rescue for melon leftovers.
