PIE CRUST – paleo recipe

Makes 1 pie crust We’ve tried lots of different ways to make pie crusts and never found one to our liking. Some were too sweet, some were too flaky, some were even too difficult to make. One morning, Stacy woke up early and headed to the kitchen, determined to solve our pie crust dilemma. An hour later, she had invented a fantastic recipe! This is now our go-to crust. INGREDIENTS • 2 C (35°F) almond flour • ½ tsp baking soda • ¼ tsp salt • ½ C coconut oil, liquefied INSTRUCTIONS AND HOW KIDS CAN HELP 1. Preheat oven to 350 degrees 2. In a mixing bowl, sift together flour, soda, and salt. 3. Add oil and use fork to incorporate. 4. Press into pie pan gently, no higher than top of the pan—if you press too hard into the pan, the dough will not release easily once fully cooked; try to move the dough with the palm of your hand, rather than pushing down on the dough. 5. Pierce several times with a fork and "pretty" your edges. 6. Bake for 10–12 minutes at 350 degrees.

Paleo pie crust that finally solved the problem of gluten-free crusts being too sweet, too fussy, or too fragile. Just almond flour, coconut oil, baking soda and salt press into the pan and bake into a sturdy, tender shell. It's the go-to crust for every pie in our kitchen.

Pro Tips

  • Move the dough with the palm of your hand rather than pushing down on it — pressing too hard packs the crust into the pan so tightly it won't release once baked.
  • Keep the dough no higher than the top edge of the pie pan; crust that climbs above the rim browns too fast and breaks off.
  • Use liquefied coconut oil so it wets the almond flour evenly; solid lumps leave dry, sandy patches in the baked shell.
  • Dock the crust well with a fork before baking so it stays flat instead of puffing up in the oven.
  • Bake it 10-12 minutes at 350 degrees until just golden — it firms up more as it cools, so pull it before it looks fully done.

Frequently Asked Questions

Why won't my pie crust release from the pan?

It was pressed too hard. Work the dough gently with your palm, keeping it from packing down, and it will come out cleanly once fully cooled.

Can I use this crust for a no-bake pie?

Yes — bake the shell as directed, let it cool completely, then fill and chill. It holds up well under creamy fillings like coconut cream.

Does butter work instead of coconut oil?

It does, in the same amount. The crust will taste a little richer and brown slightly faster, so check it at 10 minutes.

Can I bake the crust ahead?

Absolutely — it keeps a day or two wrapped at room temperature before filling, and the texture barely changes.
