Texas Firehouse Chili – texas firehouse chili

Texas firehouse chili is a no-bean, slow-cooker chili built the way the Lone Star State likes it — beef, tomatoes, and a lot of smoky heat. Cubed lean beef simmers for hours until it breaks into melt-in-your-mouth pieces, while chipotle and Mexican chili powder weave through the fire-roasted tomatoes. Top it with green onion and avocado and call it dinner.

Texas Firehouse Chili

This no-bean chili is similar to dishes entered into firehouse chili cook-offs all over Texas. This hot, Southwestern-style chili is full of spice, and the best part of the dish is how the smokiness from the chipotle pepper melds with the fire-roasted diced tomatoes, creating a filling, mouthwatering meal. By cooking this Texas Firehouse Chili slowly in the slow cooker, the cubed beef is broken down into small, melt-in-your-mouth pieces of flavorful protein. Enjoy hot with chopped green onions and sliced avocados on top!
Serves 4

1 pound (454 g) cubed lean beef
2 tablespoons (30 ml) onion powder
1 tablespoon (15 ml) garlic powder
2 tablespoons (30 ml) Mexican-style chili powder
1 tablespoon (15 ml) paprika
1⁄2 teaspoon (10 ml) oregano
1⁄2 teaspoon (10 ml) freshly ground black pepper
1⁄2 teaspoon (10 ml) white pepper
1⁄2 teaspoon (10 ml) cayenne pepper
1⁄2 teaspoon (10 ml) chipotle pepper
1 (14-ounce) can tomato purée
1 (14-ounce) can fire-roasted diced tomatoes

  1. Quickly brown the beef for 5–7 minutes in a nonstick skillet. Drain off any excess grease.
  2. Add the meat and all of the remaining ingredients to a 4-quart slow cooker. Cook on low for up to 10 hours.

Pro Tips

  • Brown the beef quickly before it goes in the slow cooker and drain the grease — the seared edges hold up to the 10-hour cook and keep the chili from tasting boiled.
  • Cube the beef small; the long slow cook is meant to break it down into tender, shreddy bits rather than leaving steak-like chunks.
  • The chipotle pepper is where the smokiness lives — if you can only find chipotle in adobo, use one pepper plus a teaspoon of the sauce.
  • This chili thickens overnight as the beef absorbs liquid, so add a splash of broth when reheating leftovers.

Frequently Asked Questions

Can I make Texas firehouse chili in a Dutch oven?

Yes — after browning the beef, simmer everything tightly covered at 300°F for about 3 hours until the meat shreds easily.

Why is there no beans in this chili?

Traditional Texas chili is bean-free — the cubed beef is the star, and the tomatoes and spices make the thick, rich base instead of beans.

How spicy is it?

It has layered heat from cayenne, white pepper, and chipotle. It's genuinely fiery but balanced; ease off the cayenne for a milder pot.

How long does it keep?

Up to 4 days in the fridge or 3 months frozen. Like most chilis, it tastes even better the next day.
