Cauliflower-Crusted Sausage and Avocado Breakfast Pizza – cauliflower-crusted sausage and avocado breakfast pizza

Cauliflower-crusted sausage and avocado breakfast pizza is the weekend breakfast that eats like a feast. A golden cauliflower-and-mozzarella crust loads up with cracked eggs, cheddar, tomatoes, jalapeño, sausage, and sliced avocado, then steams to bubbly perfection in the Instant Pot. 27g protein per serving.

Cauliflower-Crusted Sausage and Avocado Breakfast Pizza

(Total Time: 45 MIN| Serves: 4)

Ingredients:
For the Crust:
12 ounces Cauliflower Rice (ground)
½ tsp Salt
1 Egg
1 cup (240 ml) shredded Mozzarella Cheese
½ tsp Pepper

For the Pizza:
4 Eggs
¼ cup chopped Tomato
1 Avocado, sliced
1 Jalapeno, diced
4 Sausage Links, cooked and sliced
1 ½ cups shredded Cheddar Cheese
Salt and Pepper, to taste

Directions:

  1. Place the cauliflower in a microwave-safe bowl and microwave for 5 minutes.

  4. Grease the IP with some cooking spray and preheat on SAUTE.
  5. Press the cauliflower mixture and cook for 6 minutes per side.
  6. Grease a baking dish and place the crust inside (you may need to cut around the edges for the crust to fit).
  7. Sprinkle with the cheese, crack the eggs on top, and top with tomatoes, jalapenos, and sausage.
  8. Season with salt and pepper.
  9. Pour 1 ½ cups of water into your IP and lower the trivet.
  10. Place the baking dish inside and close the lid.
  11. Cook on MANUAL for 8 minutes.
  12. Release the pressure naturally.
  13. Serve and enjoy!

Pro Tips

  • Microwave and drain the cauliflower rice thoroughly before mixing the crust — a dry base is what lets it crisp into an actual pizza crust.
  • Press the crust into the greased pot and cook 6 minutes per side until it holds together before it goes anywhere near toppings.
  • Cut the crust to fit the baking dish if needed — a snug fit means neat slices instead of a scattered mess.
  • The avocado goes on fresh at serving time for creaminess; the sausage and eggs cook right on the pizza.

Frequently Asked Questions

Can I make the crust in the oven?

Yes — bake the pressed crust at 400°F until golden and firm, then top and finish. It's more work, but it crisps beautifully.

Is this pizza keto?

Yes — the cauliflower crust keeps it to 5.4g net carbs per serving while the eggs, cheese, and sausage deliver 27g of protein.

Can I use other toppings?

Any cooked breakfast meat or vegetable works. Keep the moisture low — wet toppings make the crust soggy.

How do I store leftovers?

Refrigerate slices up to 3 days and rewarm in a hot oven. Add fresh avocado each time for the best texture.
