LAVA FUDGE CUPCAKES – paleo recipe

Makes 18 cupcakes Lava is a super-hot substance that gurgles beneath the surface of Earth and sometimes erupts out of volcanoes. Lava can be anywhere from 1,300 to 2,200 degrees. It is made of rocks, dirt, and ash that are so hot they’ve melted together and become a fluid that flows along the ground burning up everything! After we learned about lava, we decided it’d be fun to make our own volcano cupcakes, with fudge “lava” inside. INGREDIENTS • 1 batch Red Brownie Cupcakes, cooled • 1 batch Fudge Sauce, chilled • 1 batch Chocolate Fudge Frosting or Creamy Not Cheese Frosting • ¼ cup chocolate chips (optional) INSTRUCTIONS AND HOW KIDS CAN HELP 1. Use an apple corer to remove the center of the thoroughly cooled cupcakes, careful not to punch through the liner. 2. Use piping bag or squeeze bottle (save those empty mustard containers!) to fill the cored portion of the cupcake with Fudge Sauce, careful not to overflow. 3. Top with Chocolate Fudge Frosting or Creamy Not Cheese Frosting and sprinkle with mini chocolate chips for extra fun.

Lava fudge cupcakes are our edible volcano experiment: brownie cupcakes with a hidden core of gooey fudge sauce inside. Frosting and mini chocolate chips finish the eruption on top. Kids go wild for cutting into one and watching the fudge lava flow.

Pro Tips

  • Cool the cupcakes thoroughly before coring — a warm cupcake tears instead of cutting, and the fudge sauce melts straight into the crumb.
  • An apple corer makes perfect wells; stop before you punch through the paper liner so the lava stays inside the cupcake.
  • Fill the cores with a piping bag or a squeeze bottle (clean mustard bottles are perfect) and stop shy of the top so the sauce doesn't overflow.
  • Use chilled fudge sauce for the filling — cold, thick sauce stays put inside the cupcake instead of soaking away.
  • Mini chocolate chips on top are the finishing fun; they echo the hidden fudge inside and give every bite a little crunch.

Frequently Asked Questions

How do I get the gooey lava center?

Core the cooled cupcake with an apple corer and fill the well with fudge sauce — the sauce does all the work, no special baking required.

What if I don't have an apple corer?

A small sharp knife or a melon baller works too. Carve a narrow well, keeping the bottom of the cupcake intact so the fudge doesn't leak out.

Can I make these ahead of time?

Yes — fill and frost them, then refrigerate in a covered container. Bring them to room temperature before serving so the fudge center loosens back up.

Which frosting should I use?

Chocolate Fudge Frosting doubles down on the chocolate, while Creamy Not Cheese Frosting gives a tangier contrast. Both were designed for these cupcakes.
