MAKES: 1 cup (240 ml) | PREP TIME: 5 minutes
Ingredients
1 large egg
1 scant cup (220 ml) avocado oil
1 teaspoon (5 ml) Dijon mustard
½ teaspoon freshly squeezed lemon juice
3 cloves garlic, finely chopped
pinch of fine-grain sea salt and freshly ground black pepper
Process
Place all the ingredients in a tall container. Place an immersion blender in the bottom of the container and turn it to high speed. The mixture will begin to thicken. As it thickens at the bottom, slowly pull the immersion blender upward to thicken the mixture throughout. (This process should take no more than 30 seconds.) Serve with Dill Butternut Squash Fries

Garlic aioli turns one egg, avocado oil, and three cloves of garlic into a thick, punchy emulsion in thirty seconds flat. It was built to sit beside Dill Butternut Squash Fries, but it upgrades everything it touches. The immersion blender does all the work - no whisking, no broken sauce.
Pro Tips
- Chop the garlic very fine before blending - the emulsion forms in seconds and will not break down large chunks.
- Use a tall container that fits the blender head snugly; if the oil spreads out below the blade the emulsion never starts.
- Hold the blender on the bottom until the base thickens to pale white, then draw it upward slowly to pull in the rest of the oil.
- Avocado oil keeps the flavor neutral; extra-virgin olive oil makes a much stronger, slightly bitter aioli.
Frequently Asked Questions
How long does garlic aioli keep?
One week refrigerated in a sealed jar. The garlic flavor actually sharpens over the first two days.
Can I use roasted garlic?
Yes - three roasted cloves give a sweeter, mellower aioli. Squeeze them from their skins and blend the same way.
Why did my aioli turn out runny?
Usually the container was too wide, so the oil never covered the blender head - or the oil went in before the base thickened.
