Coconut Sweet Potato Bites—With a Bite

With a luscious blend of dried fruit, heart-healthy nuts, super-nutritious sweet potatoes, and a pinch of pep, courtesy of cinnamon, cloves, and cardamom, these zesty, super-satisfying truffles are spectacular! Enjoy it as an easy post-meal snack or as recovery fuel following a morning workout. Just be cautious; these are so good, it’s hard to eat just one!

Yields 8–12 round bites

• 1 cup pitted dates
• 1 cup raw hazelnuts
• 2 small sweet potatoes, fully cooked, skin removed
• 1 tablespoon coconut oil
• 1/2 teaspoon cinnamon
• 1/4 teaspoon ground cloves
• 1/4 teaspoon cardamom
• 1–2 tablespoons chopped cranberries
• 1 tablespoon sesame seeds
• 1 tablespoon raw cacao powder

1. Place the dates, hazelnuts, sweet potatoes, coconut oil, cinnamon, cloves, and cardamom in a food processor or blender, and mix until evenly combined and smooth.

2. Combine the chopped cranberries, sesame seeds, and cacao powder in a small bowl and mix gently. Roll the dough into round bites of the desired size, and roll each one in the dried cranberries, sesame seeds, and cacao powder. Store in an airtight container in the refrigerator for up to 2 weeks.
