PUMPKIN CIDER “LATTE”

One cool fall morning we woke up and decided we needed a warm drink to get us through the day. Cole came up with the idea to make his very own version of a winter drink using some pumpkin and apple juice. The boys loved pretending they were drinking coffee, so we named it after a popular coffee drink that grown-ups have.

INGREDIENTS

• 1 C pumpkin purée
• 1 C pure apple juice or cider
• 1 C boxed or light canned coconut milk
• 1 tsp ground cinnamon or 1 cinnamon stick
• 1/4 tsp ground nutmeg

INSTRUCTIONS AND HOW KIDS CAN HELP

1. In a medium saucepan, whisk together the pumpkin, juice, and milk over medium heat.
2. If using cinnamon stick, add to pot.
3. Simmer until it just begins to boil while constantly stirring, about 10 minutes.
4. Whisk in powered spices until combined and remove from heat.
5. Strain and server warm; store for up to several weeks.
