Breakfast Plum Cake – breakfast plum cake

Breakfast plum cake is a tender, fruit-topped cake that's sweet enough for dessert and wholesome enough for the morning. Almond and coconut flours bake with butter, vanilla, and almond extract into a soft crumb, crowned with halved plums steamed until jammy. Grain-free, sugar-free, and utterly lovely.

Breakfast Plum Cake

(Total Time: 40 MIN| Serves: 8)

Ingredients:
½ cup Butter, softened
1 ½ cups almond Flour
2 tsp (10 ml) Baking Powder
½ cup Coconut Flour
½ cup Granulated Sweetener
3 Eggs
1 tbsp. (15 ml) Vanilla
¾ cup Almond Milk
4 Plums, pitted and halved
¼ tsp Almond Extract
Pinch of Sea Salt
¼ tsp Xanthan Gum
1 ½ cups Water

Directions:

  1. Pour the water into the Instant Pot and lower the rack.
  2. Beat the butter and sweetener until the mixture becomes smooth.
  3. Beat in the eggs, one at a time.
  4. Beat in the extracts and milk.
  5. Combine the dry ingredients in a bowl, and gradually beat this mixture into the wet one.
  6. Grease a baking dish with cooking spray and pour the batter into it.
  7. Top with the plums (cut side down).
  8. Place the dish inside the IP and close the lid.
  9. Cook for 25 minutes on HIGH.
  10. Serve and enjoy!

Pro Tips

  • Beat the butter and sweetener until genuinely smooth before adding the eggs one at a time — that creaming step is what gives the cake its light crumb.
  • Arrange the plum halves cut-side down on the batter so they caramelize into the surface as the cake cooks.
  • Add the eggs one at a time and beat well after each; the batter emulsifies properly and the cake rises evenly.
  • The almond extract is subtle but essential — it makes the plums taste more like themselves.

Frequently Asked Questions

Can I use other fruits?

Yes — apricots or peaches are lovely in place of plums. Choose fruit that softens nicely in the 25-minute cook.

Is this cake keto?

It's sugar-free and grain-free, sweetened with granulated sweetener, at about 6.5g net carbs per slice.

How many does it serve?

Eight slices at roughly 296 calories each — a generous cake that keeps well for breakfasts through the week.

How should I store it?

Refrigerate covered for up to 5 days. It's delicious cold, or gently warmed to soften the crumb and jammy plums.
