Bacon Brussels Sprouts – bacon brussels sprouts

Bacon Brussels sprouts is a smoky, savory skillet-meets-Instant-Pot dish that's ready in 15 minutes. Chopped sprouts sauté with garlic powder and smoked paprika, then fold into beaten eggs and balsamic with crispy bacon stirred in at the end. Hearty enough for breakfast, satisfying enough for dinner.

Pro Tips

  • Sauté the Brussels sprouts the full 5 minutes before the eggs go in — they need the head start to soften and pick up color.
  • Smoked paprika and garlic powder are the flavor backbone here; add them to the sprouts early so the spices toast in the oil.
  • Stir the bacon in only after the heat is off so the pieces stay crisp against the soft eggs.
  • Let it stand 10 minutes before serving — the eggs finish setting and the balsamic mellows into the dish.

Frequently Asked Questions

Can I use frozen Brussels sprouts?

Fresh is better — frozen sprouts release water and steam rather than sautéing. If using frozen, thaw and dry them thoroughly first.

How spicy is it?

Not spicy at all — the smoked paprika gives a warm, smoky depth without heat. Add chili flakes if you want a kick.

Is this a breakfast or dinner dish?

Either — at 307 calories and 20g protein per serving it works as a savory breakfast or a light, quick supper.

How long do leftovers keep?

Up to 3 days in the fridge. Reheat gently so the eggs stay tender.
