I try to avoid desserts as a rule, but of course there are always those days when one savoury course just isn’t enough and what you really want is something sweet. This apple pie is still Paleo and will hopefully hit the spot.

5 Granny Smith apples, peeled, cored and sliced
½ teaspoon cinnamon
juice of 2 oranges
3 tablespoons maple syrup
for the topping
3 tablespoons maple syrup
150g almond flour or coconut flour
3 egg whites, whisked
1. Preheat the oven to 180ºC/gas mark 4.
2. Place the apples, cinnamon, orange juice and maple syrup in a large bowl and mix together until the apple pieces are thoroughly coated. Tip the fruit into a baking tin and bake for 35 minutes.
3. Meanwhile, place all the topping ingredients in a bowl and mix together thoroughly.
4. When the apple is cooked, spread the topping mix evenly over the top, then return to the oven and bake for a further 30 minutes. Serve slightly warm.
TIP
Any leftovers will also make a very tasty breakfast.
