Zesty Paleo Meatloaf

A Paleo-approved comfort food, this Zesty Paleo Meatloaf is sure to warm you up from the inside out! Enjoy atop some mashed or riced cauliflower, or a medley of roasted root veggies. The rice and succulent flavor of the beef and pork/veal blend is accented beautifully with a blend of veggies, savory seasonings, and a sensational spicy marinade!
Serves 8

For Meatloaf Marinade:

15 ounces tomato sauce (canned or homemade)
6 ounces tomato paste
3 tablespoons spicy mustard
2 tablespoons lime juice
For Meatloaf:

11⁄2 pounds lean ground beef
11⁄2 pounds lean ground pork or veal
2 eggs
1 cup chopped onion (yellow is recommended)
1 cup shredded carrots
1 cup chopped tomatoes
1 cup chopped green and red bell peppers
1⁄2 cup arrowroot powder
1⁄2 teaspoon cayenne pepper
1⁄2 teaspoon cumin
Salt and pepper, to taste

  1. For Meatloaf Marinade: Stir together all marinade ingredients, until thoroughly combined.
  2. For Meatloaf: Preheat the oven to 375°F. Mix together all of the loaf ingredients, combining evenly. Form a loaf in a roasting pan and bake for 40–50 minutes. Remove loaf from oven, and turn heat up to 450°F. Evenly coat the meatloaf with the marinade, until all sides are covered, and return to the oven for about 15 minutes, until sauce has thickened.
