Sweet And Savory Roasted Cauliflower
1 medium head of cauliflower, trimmed into small, bite-size pieces
1 tablespoon (15 ml) olive oil
1 teaspoon (5 ml) ground cumin
½ teaspoon freshly cracked black pepper
¼ cup ghee or coconut oil
¼ cup dates, pitted and finely chopped
1 tablespoon (15 ml) minced fresh rosemary
1 cup (240 ml) pitted black olives, cut in half
- Preheat the oven to 400°F (200°C).
- Coat the cauliflower pieces with the olive oil, cumin and pepper. Place on a sheet pan in a single layer.
- Place the sheet pan on the top rack of the oven and roast the cauliflower for 15 minutes, or until lightly browned.
- Meanwhile, heat the ghee in a small saucepan over medium heat. When the ghee is melted, add the dates and rosemary and cook for 2-3 minutes. Use a spatula to separate the date bits in the ghee as they cook. Remove from the heat and stir in the olives.
- Remove the cauliflower from the oven and transfer it to a medium-size serving bowl. Add the date-olive mixture and toss gently.
NOTES: Any kind of olive will do here, so feel free to use what you have on hand. For ease of cleanup, we suggest coating your sheet pan with aluminum foil first!

This sweet and savory roasted cauliflower roasts cumin-scented florets until browned, then tosses them with a warm mixture of ghee, chopped dates, rosemary, and halved black olives. Dates and olives make every bite a little sweet and a little briny. It is a side dish people talk about.
Pro Tips
- Roast the cauliflower in a single layer on the top rack so it browns instead of steaming. Fifteen minutes is all it needs.
- Coat the florets evenly with the olive oil, cumin, and pepper before roasting. The cumin toasts on the pan and perfumes the whole dish.
- Cook the chopped dates in the melted ghee for 2-3 minutes, separating the bits with a spatula. They melt into the fat like little caramel pockets.
- Stir the olives in off the heat so they stay firm and briny against the soft dates.
- Toss everything together gently while the cauliflower is warm so the ghee and date mixture clings to every floret.
Frequently Asked Questions
Is roasted cauliflower with dates paleo?
It is - cauliflower, olive oil, cumin, ghee (or coconut oil), dates, rosemary, and black olives. No sugar added.
Can I make this dish ahead of time?
It is best warm from the oven, but leftovers keep for 3-4 days in the fridge and rewarm well in a hot oven.
Can I use coconut oil instead of ghee?
Yes - the recipe calls for either. Ghee gives a richer, buttery flavor while coconut oil keeps the dish dairy-free.
What should I serve with this cauliflower?
It pairs with any simply cooked protein. The sweet-salty mixture works almost like a chutney alongside roasted meats.
