More Recipes You'll Love

Shredded pork tacos with mango salsa turn a batch of prep-day pulled pork into a five-minute weeknight dinner. The pork reheats gently with taco seasoning and a splash of water until it is glossy and spoonable, then gets piled into crisp lettuce cups. Cool, sweet mango salsa over warm, spiced pork is the combination that makes this dish.

Pro Tips

  • Keep the skillet at a low simmer once the pork goes in. High heat dries out pre-cooked shredded pork instead of just warming it through.
  • The tablespoon of water is what revives leftover pork — it creates steam that loosens the meat back to its original juicy texture.
  • Separate the lettuce cups carefully and choose ones with a natural curve. They hold the pork and salsa far better than flat leaves.
  • Spoon the mango salsa on at the very end so it stays cool against the warm pork — that temperature contrast is half the fun.

Frequently Asked Questions

Can I use chicken instead of pork for these tacos?

Yes. Shredded prep-day chicken reheats the same way in the seasoned oil and water, and the mango salsa works just as well over it.

How spicy is the taco seasoning here?

Mild and family-friendly, with the mango salsa adding the real flavor contrast. If you want heat, add a little extra chili along with the taco seasoning or a minced jalapeño to the salsa.

Can I make these tacos ahead for a party?

Keep the pork warm in a slow cooker on low and set out the lettuce cups and salsa separately. Guests build their own, and nothing wilts before they get to it.
