CITRUS-BAKED FISH

I think grilling is my favorite way to cook fish, but baking comes in a close second. It takes no time at all and uses minimal dishes, which I love when it’s time to clean up. This citrusy fish is fresh, fast, and delicious. Topped with lots of fresh herbs, it makes for a delightful light lunch when it’s hot outside. SERVES 4

PREP TIME: 10 minutes

COOK TIME: 15 minutes

2 lemons, sliced, divided

3 limes, sliced, divided

4 to 6 (6-ounce) fillets white fish (such as cod)

Salt

Freshly ground black pepper

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh parsley

  1. Preheat the oven to 400°F.
  2. In an 8-by-12-inch baking dish, layer half of the sliced lemons and limes to cover the bottom of the pan. Top with the fish fillets, and season with salt and pepper.
  3. Layer the remaining lemon and lime slices on top, and bake for 10 to 15 minutes, until the fish flakes easily with a fork.
  4. Remove from the oven, and serve the fish topped with the dill and parsley.

VARIATION 1 CITRUS-BAKED FISH WITH ORANGES: Swap out the lemons (or limes, whichever you prefer) for oranges for a sweeter version.

VARIATION 2 CITRUS-BAKED SALMON: Use salmon instead of white fish. The cook time may be a little longer—check them after 10 minutes. You’ll know it’s done when it flakes easily with a fork. Salmon is loaded with healthy fats, so it’s a great alternative.

PREP TIP: Layer up the dish ahead of time, and pop it in the oven before dinner.
