Chipotle Chicken Casserole

A smoking-hot, blazing concoction, this Chipotle Chicken Casserole is guaranteed to impress even the most daring spicy food lovers. The chili, chipotle powder, and crushed red pepper combination add a serious “wow” factor to an otherwise simple dish. The cumin and cilantro bring a little more pep, intensifying the heat to a perfect degree of H-O-T!
Serves 2–4

1 red bell pepper, chopped
Olive oil, for sautéing
1 cup green onions, chopped
3 cloves garlic, minced
1 large head cauliflower, cut into florets and steamed
1 teaspoon chili powder
1 teaspoon chipotle powder
1 teaspoon crushed red pepper flakes
1⁄2 teaspoon ground cumin
2 grilled chicken breasts, chopped
1 cup cherry tomatoes, chopped
3 tablespoons cilantro, chopped

  1. Preheat the oven to 375°F.
  2. Sauté red pepper pieces in olive oil in a medium skillet over medium heat for 3–4 minutes; add green onions and garlic, and continue sautéing for 2–3 more minutes.
  3. Cut cauliflower florets into 1⁄2 –1″ chunks, place in a large bowl, and add chili and chipotle powders, crushed red pepper flakes, and cumin; and mix until well blended. Stir in red pepper concoction, chicken, tomatoes, and cilantro, and pour entire mixture into a pre-greased casserole dish. Bake for 20–30 minutes.
