Peach Salsa
3 to 4 medium peaches, pitted and diced
2 plum tomatoes, seeded and diced
½ cup diced sweet onion (such as Vidalia, Bermuda or Sweet Maui)
1 fresh jalapeño pepper, seeded and finely diced
Juice of 1 lime
2 tablespoons (30 ml) minced fresh cilantro
2 tablespoons (30 ml) minced fresh mint
- Combine all the ingredients in medium-size bowl.
- Cover and keep refrigerated until ready to serve.
NOTE: Cut-up peaches mixed with lime juice start to lose their color and fresh look pretty quickly, though the taste is still fine. We suggest serving this salsa on the same day you make it or holding off on adding the lime juice until you are going to serve this.

This peach salsa dices ripe peaches with plum tomatoes, sweet onion, and a seeded jalapeno, then brightens everything with lime, cilantro, and fresh mint. Sweet, spicy, and completely raw - five minutes of chopping and it is done. Serve it the same day you make it.
Pro Tips
- Use ripe peaches that give slightly to pressure. Underripe peaches make a hard, bland salsa.
- Add the lime juice right before serving. Cut peaches mixed with lime lose their fresh color quickly, even though the taste stays fine.
- Seed the jalapeno completely if you want only background warmth. The seeds and membranes are where the fire lives.
- Choose sweet onion varieties - Vidalia, Bermuda, or Sweet Maui. Raw onion should not bite in a fruit salsa.
- Dice everything to a similar small size so every spoonful carries peach, tomato, and herbs together.
Frequently Asked Questions
Is peach salsa paleo?
It is - peaches, tomatoes, onion, jalapeno, cilantro, mint, and lime juice. No sugar is added; the peaches do all the sweetening.
How long does peach salsa keep?
It is best eaten the day it is made. It keeps for a day or two in the fridge, though the color fades once the lime goes in.
Can I make it ahead for a party?
Yes - dice everything but hold the lime juice back until just before serving so the peaches stay bright and fresh-looking.
What should I serve with peach salsa?
It is a natural topping for grilled chicken or pork, or you can simply scoop it up with fresh vegetables.
