Essenced Egg Salad

Egg salad is definitely a comfort food, and just a small amount will fill you up. This spicy Paleo version is sure to please! The spice in this recipe is not overbearing, but extra heat can always be added to make this a fiery lunch option. This is great on top of a salad. Try adding chopped vegetables if you like crunch! Celery, onions, jalapeños, and other vegetables work well.
Serves 2

6 large eggs, boiled and cooled
11⁄2 tablespoons Paleo Mayo (see Chapter 5)
1 teaspoon Dijon mustard
1⁄2 teaspoon garlic powder
1⁄2 teaspoon paprika
1⁄4 teaspoon cayenne pepper
2 chives, chopped
Salt and pepper, to taste
Peel cooled eggs and roughly chop. Place in a bowl and add all other ingredients. Mash/fold ingredients with a fork until well blended. Serve chilled.
