Popeye may eat spinach from a can, but we think you’ll prefer fresh spinach! You may have had spinach in a salad, but it’s really neat to cook spinach because it shrinks in the pan! We also think you’ll like spinach better with bacon. Lots of bacon! We eat this with breakfast a lot and it really helps our bodies grow strong because spinach has tons of good vitamins and minerals. And the stable saturated fat from the bacon makes those nutrients easily absorbed by your growing body. Not to mention, bacon makes everything taste better!

INGREDIENTS

• ½ lb nitrate-free bacon, diced
• 4 cups spinach (or any fresh green, reuse the tops of your beets and turnips too)
• ¼ tsp pepper

INSTRUCTIONS AND HOW KIDS CAN HELP

1. Over medium heat, fry bacon until almost crispy.
2. Add spinach and toss quickly to coat with bacon grease.
3. Continue to toss and allow spinach to wilt but not burn, about 3 minutes.
4. Remove from heat and mix in pepper.
