Avocado Eggs Stir-Fry

(Total Time: 15 MIN| Serves: 2)

Ingredients:
1 medium-sized avocado, pitted and cubed
2 large eggs, beaten
2 tbsp green onions, finely chopped
1 tsp olive oil
1 tbsp butter

Spices:
½ tsp sea salt
¼ tsp black pepper, ground
¼ tsp red chili flakes

Directions:

  1. Peel the avocado and cut in half. Remove the pit and cut into bite-sized cubes. Set aside.
  2. Plug in your instant pot and melt the butter in the stainless steel insert. Press the “Sauté” button and add avocado cubes. Sprinkle with salt and pepper and cook for 3-4 minutes, stirring occasionally.
  3. Now, add eggs, green onions, and olive oil to taste. Optionally, add 2 tablespoons of milk for a creamier texture.
  4. Cook for 3 more minutes, or until the eggs are set. Press the “Cancel” button and turn off the pot. Transfer all to serving plate and optionally, top with some heavy cream or plain Greek yogurt.
  5. Enjoy!
