Cardamom Cooler

This cool and creamy smoothie-like cooler is a sweet and punchy treat on a hot day. The pungent ground cardamom and spicy ginger use their heat to accent the sweetness from the vanilla and banana. To switch things up a bit, try this recipe warm! Just omit the ice, and once the mixture is puréed, place it back on the heat to simmer. Add a touch of cacao or even some coffee for a deliciously warming drink—in both temperature and taste!

Serves 2

• 2 cups coconut milk
• 1/4 cup unsweetened coconut milk creamer
• 1 overripe banana, sliced
• 2 tablespoons raw organic honey
• 1 teaspoon vanilla extract
• 1 teaspoon ground cardamom
• 1 teaspoon cinnamon, plus extra for garnish
• 1/2 teaspoon ground ginger
• 2 cups ice

1. Pour all ingredients (except the ice) into a medium sauce pot. Turn the heat to medium and bring the mixture to a low simmer. Let it simmer on low for about 5 minutes, stirring frequently. Remove from heat to cool.

2. Once cooled, pour the mixture into a blender and purée until you reach a smooth consistency. Add ice to the creamy mixture for added crunch and a smoothie-like consistency. Serve cold, and sprinkle top with extra cinnamon.
