Candied Bacon Chocolate Brownies

MAKES: 18 brownies | PREP TIME: 10 minutes | COOK TIME: 35 to 40 minutes

Ingredients

coconut oil, for greasing the baking dish

2 cups (500 grams) almond butter

1 cup (240 ml) organic honey

2 large eggs, whisked

1 teaspoon vanilla extract

½ cup (50 grams) unsweetened cocoa powder

1 teaspoon baking soda

pinch of fine-grain sea salt

¾ cup (3½ ounces/100 grams) Enjoy Life Chocolate Chip Mega Chunks

5 strips Candied Bacon (see here), roughly chopped, divided

large pinch of coconut sugar, for garnish

Process

  1. Preheat the oven to 325°F (165°C). Grease a 13-by-9-inch (33-by-23-cm) baking dish with coconut oil.
  2. In a large bowl, mix together the almond butter, honey, eggs, and vanilla. Mix in the cocoa powder, baking soda, and salt. Fold in the chocolate chunks, then fold in half of the candied bacon.
  3. Pour the brownie mixture into the greased baking dish and smooth out the top. Sprinkle the top with the remaining candied bacon.
  4. Bake for 35 to 40 minutes, or until a toothpick comes out clean when inserted in the middle. Let cool in the pan for about 5 minutes, then sprinkle with the coconut sugar. Cut into squares and serve.
