Avocado Mousse

MAKES: 1 cup (240 ml) | PREP TIME: 15 minutes

Ingredients

1 cup water (240 ml)

1 teaspoon fine-grain sea salt, plus more to taste

1 large avocado, peeled and pitted

juice of 1 lime

freshly ground black pepper, for garnish (optional)

Process

  1. Combine the water and 1 teaspoon salt in a small bowl or container just large enough to hold the avocado. (A soak in salt water will slow the process of the avocado turning brown.)
  2. Place the peeled and pitted avocado in the salt water. The avocado should be submerged in the salt water; if not, add a little more water and salt. Let it soak for 10 to 15 minutes. Remove from the water and place in a food processor. Add the lime juice and season with salt. Process until you have a smooth mousse. It can be piped with a pastry bag or by using a snipped corner of a resealable plastic bag. Serve with a sprinkling of pepper, if desired. Store in the refrigerator in a sealed container for up to 5 days.
