APPLE PIE CUPCAKES

Makes 12 cupcakes

One of our favorite things to do on a rainy day is to watch food shows on TV. We especially love DC Cupcakes because that bakery is near to where we live! They punch a hole in the middle of their cupcakes and fill it with a delicious filling. What a great idea!

These cupcakes remind us of apple pie. We like to make them with our thick Applesauce (p. 131), but you can use any applesauce you have. If you use a store-bought brand, we suggest cooking it on the stovetop uncovered for a few minutes to thicken it, or it’ll run out of the bottom of your cupcake!

INGREDIENTS

• 1½ C Applesauce, separated
• ¼ C coconut oil, liquefied
• ¼ C honey
• 2 eggs
• 1 Tbsp vanilla
• 1½ C almond flour
• ½ C coconut flour
• 1½ tsp baking soda
• ¼ tsp salt

INSTRUCTIONS AND HOW KIDS CAN HELP

1. Beat together ½ cup applesauce with oil and honey.
2. Add eggs and vanilla while beating the wet mixture.
3. In a separate bowl, sift and combine the flours, baking soda, and salt.
4. Slowly add the dry ingredients to wet ingredients, while beating on low, until just combined.
5. Fill lined muffin cups ¾ full and bake at 350 degrees for 25 minutes, or until centers are firm.
6. Use an apple corer to remove the center of the thoroughly cooled cupcakes, careful not to punch through the liner.
7. Use piping bag or squeeze bottle (save those empty containers!) to fill the cored portion of the cupcake with thick applesauce, until just level with the cupcake.
8. Top with Caramel Icing.
9. Store chilled for up to a week.
