WATERMELON ICE POPS

If you’re like us, you probably have watermelon leftover after you’ve purchased a whole big melon. When it’s been sitting in the refrigerator for a couple of days or so, the remaining pieces get really juicy—it’s a perfect time to use them for making these ice pops.

We like to use Enjoy Life dairy-free, soy-free mini chocolate chips to make the ice pops look like they have watermelon seeds in them, but you can freeze them without the chocolate or add any chopped fruit you have available. It’s a wonderful fruity and colorful base for whatever your imagination can think up!

INGREDIENTS

• 2 C very ripe and juicy watermelon
• 1/3 C mini chocolate chips

INSTRUCTIONS AND HOW KIDS CAN HELP

1. Remove any seeds and chop watermelon into 1- to 2-inch chunks.
2. Purée watermelon in a blender or food processor until very smooth.
3. Pour evenly into 4 ice pop molds, careful to not overfill.
4. Distribute chocolate chips by sprinkling on top of ice pop molds.
5. Gently stir in chocolate chips, ensuring they are distributed throughout popsicle. The chips should not sink to the bottom of the molds; the pulp of the watermelon will help them stay where they are “put” by being stirred.
6. Freeze for several hours, until the ice pop is easily released by pulling on the stem (a quick dip in warm water will help).
