HAWAIIAN VACATION SMOOTHIE

Makes 16 oz smoothie

Sometimes, especially in the cold of winter, it’s fun to use your imagination and pretend you’re on vacation. Use tropical fruits like mango and pineapple to make a “vacation smoothie” like this one. Then put on your bathing suit and sunglasses and pretend you’re on a tropical island beach, sipping this treat through a straw. It’s delicious, and the healthy fats in the coconut milk and macadamia nuts will keep you nourished for quite a while!

If you use fresh fruit instead of frozen, then replace half the water with ice to make this a nice, cool smoothie.

INGREDIENTS

• ¼ C raw macadamia nuts
• 1 C coconut milk
• ½ C ice or water
• ½ C fresh or frozen mangos
• ½ C fresh or frozen pineapples

INSTRUCTIONS AND HOW KIDS CAN HELP

1. In blender, pulse nuts until they are the consistency of sand.
2. Add remaining ingredients and purée until smooth.
