SPICY ROASTED OKRA

YIELD: 4 to 6 servings | PREP TIME: 5 minutes | COOK TIME: about 15 minutes

• ½ pound fresh okra, sliced in half lengthwise
• 1 teaspoon paprika
• ¼ teaspoon granulated garlic
• ¼ teaspoon salt
• ⅛ teaspoon dried oregano leaves
• ⅛ teaspoon cayenne pepper (optional)
• 2 tablespoons avocado oil

1. Preheat the oven to 425°F and line a rimmed baking sheet with parchment paper.
2. In a large bowl, toss the okra with the seasonings and oil.
3. Spread it cut side down on the lined baking sheet.
4. Place the baking sheet in the bottom third of the oven and roast the okra for 8 minutes, then flip it over and roast for another 6 minutes, until it is golden brown and crisp.
