Avo Bacon Muffins
(Total Time: 40 MIN| Serves: 16)
Ingredients:
5 Bacon Slices, cooked and crumbled
5 Eggs, beaten
1 ½ cups Coconut Milk
2 Avocados, diced
4 ½ ounces grated Cheese
½ cup Almond Flour
2 tbsp. Butter
¼ cup Flaxseed Meal
1 ½ tbsp. Phylum Husk Powder
1 ½ tbsp. Lemon Juice
3 Spring Onions, diced
1 tsp Oregano
1 tsp minced Garlic
1 tsp Onion Powder
1 tsp Salt
Pinch of Pepper
1 tsp Baking Powder
1 ½ cups Water
Directions:
- Pour the water into the Instant Pot and lower the trivet.
- Whisk together the wet ingredients.
- Gradually and gently, stir in the dry ingredients until smooth.
- Stir in the avocado, bacon, onions, and cheese.
- Divide the mixture into 16 small or medium muffin cups.
- Place half of them inside your IP. Close the lid and cook on HIGH for 12 minutes.
- Do a quick pressure release.
- Repeat the process one more time.
- Serve and enjoy!
