WHIPPED COCONUT CREAM

Makes 1 cup of whipped coconut cream

We love to put berries and coconut cream on our Sunday morning Frozen Waffles, but they’re also a delicious treat all by themselves. If you like to get the can of whipped cream from the fridge and spray it on your dessert, this is a great alternative with no dairy!

The coconut cream pairs well with all sorts of berries, but our favorites are strawberries and blueberries. It’d even be great on our Cherry Macadamia Crumble!

INGREDIENTS

• 1 (14 oz) can full-fat coconut milk, chilled in refrigerator overnight
• 2 Tbsp honey
• 1 pint of berries of your choice (optional)

INSTRUCTIONS AND HOW KIDS CAN HELP

1. Open can and scoop the thick white hardened cream into mixer (about 4 oz).
2. Beat on a medium to high setting for 2–3 minutes.
3. Add honey and beat for another 2–3 minutes, until cream thickens and becomes slightly stiff (it will not stand up like dairy whipped cream).
4. Serve immediately or store chilled for up to 2 weeks.
