Bacon And Okra Pilau

4 bacon strips, cut into ВЅ-inch pieces

1 onion, peeled and diced

1 medium green bell pepper, seeded, deribbed and diced

2 cups okra, cut crosswise into ВЅ-inch rounds

3 cups Cauliflower Rice

ВЅ teaspoon paprika

Вј teaspoon cayenne pepper

Salt and freshly ground black pepper, to taste

1ВЅ cups chicken stock

  1. Preheat a Dutch oven or a large skillet (with a lid) over medium heat, add the bacon and fry until crispy. Using a slotted spoon, remove the bacon from the Dutch oven to a plate lined with paper towels. Reserve the bacon grease in the Dutch oven.
  2. Add the onions and peppers to the Dutch oven in which the bacon was fried and sautГ© for 4 to 6 minutes, or until the onions soften. Mix in the okra, increase the heat to medium-high and then stir in the Cauliflower Rice, paprika, cayenne pepper, salt and pepper.
  3. Pour in the chicken stock, cover, and bring to a boil. Reduce the heat to low, cover and let simmer until most of the chicken stock has cooked off, about 10 minutes.
  4. Mix in the reserved bacon and serve hot.
