Peach Salsa

3 to 4 medium peaches, pitted and diced

2 plum tomatoes, seeded and diced

ВЅ cup diced sweet onion (such as Vidalia, Bermuda or Sweet Maui)

1 fresh jalapeГ±o pepper, seeded and finely diced

Juice of 1 lime

2 tablespoons minced fresh cilantro

2 tablespoons minced fresh mint

  1. Combine all the ingredients in medium-size bowl.
  2. Cover and keep refrigerated until ready to serve.

NOTE: Cut-up peaches mixed with lime juice start to lose their color and fresh look pretty quickly, though the taste is still fine. We suggest serving this salsa on the same day you make it or holding off on adding the lime juice until you are going to serve this.
