Onion and Spinach Omelet with Goat Cheese

(Total Time: 25 MIN| Serves: 1)

Ingredients:
2 tbsp. Butter
¼ Onion, sliced
1 Spring Onion, chopped
2 cups Spinach
3 Eggs, beaten
1 ounce Goat Cheese
¼ tsp Garlic Salt
Pinch of Pepper
1 ½ cups Water

Directions:

  1. Melt the butter in the Instant Pot on SAUTE.
  2. Add onions and cook for 3 minutes.
  3. Stir in spinach and spices and cook for 1 more minute.
  4. Transfer the mixture to a greased baking dish.
  5. Pour the eggs over and stir in the cheese.
  6. Pour the water into the IP and lower the rack.
  7. Place the baking dish inside and close the lid.
  8. Cook on HIGH for 12 minutes.
  9. Serve and enjoy!
