GOOSE EGG SCRAMBLE

Serves 4

Goose and duck eggs have large, nutrient-rich egg yolks. Did you know they are a wonderful combination of fat, protein, vitamins, and minerals that your body loves to absorb to help your body and brain grow? When we found goose eggs at our local farmers’ market, we talked about how they might be different from our usual chicken eggs. Immediately our boys insisted we try them!

We learned that the larger the egg, the harder it is to crack. If goose eggs took a lot of muscle to crack, what would an Ostrich egg take? A hammer?

INGREDIENTS

• 1 lb nitrate-free pork breakfast sausage
• 2 medium sweet potatoes, peeled and diced
• 2 scallions (we use the onion greens growing in our garden), sliced
• 2 goose eggs (4 duck eggs or 6 chicken eggs)

INSTRUCTIONS AND HOW KIDS CAN HELP

1. Sauté sausage and sweet potatoes over medium heat until potatoes are soft, about 10 minutes; if your sausage is not fatty enough, add a tablespoon or two of the fat of your choice.
2. Add scallions once sausage is brown and sweet potatoes are cooked through.
3. While waiting for mixture to cook, crack and scramble eggs, making sure to add lots of airy bubbles.
4. Pour eggs over sausage, potato, and onion mixture, stirring continuously.
5. Cook until eggs are done (about 5 minutes).
