This is the perfect, easy dish to rustle up in minutes when you really need something for that sweet tooth.

SERVES 4

4 ripe bananas

2 eggs

150g almond flour

coconut oil, for frying

150g coconut flour

1. Place the banana in a large bowl and, with a fork, mash until it forms a thick paste. Add the eggs and almond flour and whisk until combined.

2. Heat a little coconut oil in a large non-stick frying pan over a medium heat. When hot, drop small spoonfuls of banana batter into the oil and press down flat.

3. Sprinkle with a little coconut flour and fry for a few minutes, then flip the fritter over with a spatula and cook on the other side. Repeat until all the batter is used up. Serve warm.

TIP

Bananas are very interesting in relation to their carbohydrate and sugar content. They are very sweet, especially when ripe and they do contain 14-15 grams of sugar, yet they have a low-GI value, which means the sugar doesn’t result in a short, fast energy spike. This is largely down to their high fibre content as this helps regulate digestion (i.e. the conversion of carbs to simple sugars), and in particular to a type of fibre called pectin, as this moderates the impact of banana consumption on our blood sugar and supports our overall digestive health.
