BAKED SWEET POTATOES
Baking a sweet potato is one of the easiest ways you can prepare the tough root vegetable—it may take an hour, but all you do is pop it in the oven and set a timer. I love making them as a side for dinner, so long as I remember that I had planned to make them so I don’t end up having to postpone dinnertime by an hour. Make yourself a note, and throw them in the oven as soon as you get home from work. SERVES 4
PREP TIME: 5 minutes
COOK TIME: 1 hour
4 sweet potatoes
- Preheat the oven to 400°F.
- Poke each sweet potato 6 or 7 times with a fork. Place them on a baking sheet and bake until tender, 45 minutes to 1 hour, and serve.
VARIATION 1 BAKED SWEET POTATOES WITH GARLIC BUTTER AND CHIVES: In a small bowl, mix 3 or 4 tablespoons room-temperature butter with 1 or 2 cloves finely minced garlic. Mix well, and add a dollop to each baked sweet potato. Garnish with chopped fresh chives, and season with salt and pepper.
