Caramelized Onion Bacon Dip

Makes 1 cup

Ingredients

2 strips of bacon
1 large onion
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 cup Paleo Mayo
pinch of coarse ground sea salt

Instructions

Preheat the oven to 350F.
Add bacon to a 4.8 quart oblong glass baking dish and bake for 15 minutes.
Flip each piece using tongs and cook for 5-7 minutes.
Cut ends off onion, peel and rinse. Slice and add to a 10-inch skillet over medium heat and cook for 15-20 minutes, stirring often, until the onions are caramelized.
Remove from heat and let cool 10-15 minutes.
Reserve 1 tablespoon onions and add the rest to a food processor along with onion powder, garlic powder, Paleo Mayo, sea salt, and cooked bacon.
Process until mixed and onions are chopped.
Chop reserved onions and add to a serving bowl.
Transfer mixture from the food processor to the serving bowl and stir to combine.
Serve with plantain chips.
