Quick Skillet Frittata

1 tablespoon butter

ВЅ cup diced onion

ВЅ cup sliced button mushrooms

2 cups shredded purple sweet potatoes

ВЅ pound kielbasa sausage, thinly sliced

12 large eggs, whisked

  1. In a medium-size nonstick skillet, heat the butter and sautГ© the onions and mushrooms for 3 minutes. Remove to a plate and set aside.
  2. Place the shredded sweet potatoes on a paper plate and microwave on high for 2 minutes to soften.
  3. Cook the sausage in the skillet used for the onions over medium heat until browned, about 5 minutes. Remove to a plate and set aside.
  4. Cover the entire bottom of the skillet with the shredded sweet potatoes and then spoon the reserved onions and mushrooms on top.
  5. Pour the whisked eggs over the vegetables in the skillet and then place the sausage slices on top like you would a pizza.
  6. Cover the skillet and cook the frittata for 10 to 15 minutes, or until the eggs have firmed up.
  7. Slice the frittata like a pie and serve at once.

VARIATION: If you don’t have access to purple sweet potatoes, any kind of sweet potato would be fine.
