Sesame Asparagus
1 bunch asparagus spears (about one pound)
1 teaspoon sesame oil, plus 2 teaspoons for coating
ВЅ teaspoon dried marjoram
1 medium red bell pepper, seeded, deribbed and julienned
1 small clove garlic, peeled and minced
ВЅ teaspoon sesame seeds, toasted
- Cut the asparagus into 1-inch pieces on the diagonal, discarding the tough, woody ends.
- Heat 1 teaspoon of the sesame oil over medium heat in a nonstick skillet and add the marjoram.
- SautГ© the asparagus and peppers until the asparagus is dark green and still crisp, being careful not to overcook it.
- Remove the skillet from the heat, and stir in the garlic and the remaining 2 teaspoons of sesame oil.
- Garnish the asparagus and peppers with sesame seeds and serve.
NOTE: A little sesame oil goes a long way. While we are believers in guesstimating on many ingredients, be careful, as too much sesame oil can really overpower a dish.
