Pizza Frittata

(Total Time: 40 MIN| Serves: 8)

Ingredients:
½ cup grated Parmesan Cheese
5 ounces Mozzarella Cheese, grated
½ cup Ricotta Cheese
1/3 cup mini Pepperoni
4 tbsp. Olive Oil
9 ounces Spinach
12 Eggs
1 Garlic Clove, minced
Pinch of Salt
Pinch of Pepper
1 ½ cups Water

Directions:

  1. Pour the water into the Instant Pot.
  2. Beat the eggs along with the oil, salt, and pepper.
  3. Stir in the ricotta, parmesan, spinach, and garlic.
  4. Grease a baking dish and pour the mixture into it.
  5. Top with pepperoni and mozzarella.
  6. Place the dis on the rack and close the IP.
  7. Cook for 15 minutes on HIGH.
  8. Release the pressure naturally.
  9. Serve and enjoy!
