Chilled Melon Soup

1 medium cantaloupe, peeled, seeded and cubed

ВЅ cup unsweetened coconut milk

2 tablespoons freshly squeezed lime juice

2 tablespoons honey

4 teaspoons freshly squeezed lemon juice

Вј teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1/8 teaspoon salt

Вј cup sliced, pitted cherries

Вј cup pistachios, toasted

  1. Place half of the cantaloupe in a blender and blend until smooth.
  2. Add the remaining cantaloupe and all the ingredients except the cherries and pistachios and blend until smooth.
  3. Pour the soup into bowls, garnish with the sliced cherries and pistachios, and serve at once, or chill until ready to serve.

NOTE: Buy precut melon to save time.
