Breakfast Caulicheese – breakfast caulicheese

Breakfast caulicheese is the creamiest way to start the day with cauliflower on your fork. Riced cauliflower bakes in a foil-covered dish with cheddar, cream cheese, and half and half until it turns into a silky, golden gratin. Five minutes of pressure cooking — pure comfort, minimal carbs.

Breakfast Caulicheese

(Total Time: 20 MIN| Serves: 4)

Ingredients:
2 cups (480 ml) Cauliflower Rice (ground in a food processor)
½ cup shredded Cheddar Cheese
½ cup Half and Half
2 tbsp. (30 ml) Cream Cheese
¼ tsp Salt
¼ tsp White Pepper
1 ½ cups Water

Directions:

  1. Pour the water into your Instant Pot and lower the trivet.
  2. Combine all of the ingredients in a greased baking dish.
  3. Cover with a foil and place inside the IP.
  4. Close the lid and cook for 5 minutes on HIGH.
  5. Let the pressure drop on its own for about 10 minutes.
  6. Serve and enjoy!

Pro Tips

  • Rice the cauliflower in a food processor until fine and even — coarse pieces won't absorb the creamy sauce properly.
  • Cover the baking dish with foil before it goes in the Instant Pot; trapped steam keeps the top creamy instead of watery.
  • Combine all the ingredients in the greased dish before cooking so the cheeses melt evenly through the cauliflower.
  • Let the pressure drop naturally for 10 minutes — the slow finish sets the gratin without curdling the dairy.

Frequently Asked Questions

Can I make it in the oven?

Yes — bake the mixed dish covered at 375°F until bubbling and the cauliflower is tender, then finish uncovered for color.

Is it low-carb?

Very — just 4g net carbs and 134 calories per serving, with the cheese and cream providing satisfying richness.

Can I add more to it?

Crispy bacon, green onions, or a pinch of nutmeg all work beautifully stirred through the cauliflower-cheese base.

How long does it keep?

Up to 3 days in the fridge. Rewarm gently — high heat will make the half and half separate.
