Brunswick Ish Stew

1 tablespoon coconut oil

1 medium yellow onion, peeled and chopped

3 stalks celery, chopped

Two 28-ounce cans tomato sauce

One 14-ounce can diced tomatoes

1 medium green bell pepper, seeded, deribbed and chopped

1 cup Barbecue Sauce (see recipe)

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 tablespoon ghee

1 pound ground beef

1 pound pork tenderloin, thinly sliced

2 teaspoons liquid smoke

1 teaspoon cayenne pepper

1 teaspoon freshly ground black pepper

1 rotisserie chicken, shredded

3 cups Cauliflower Rice (see How to Make Cauliflower Rice)

Tabasco sauce, to taste (optional)

Salt and freshly ground black pepper, to taste

  1. In a large stockpot, heat the coconut oil over medium-high heat. SautГ© the onions and celery until the onions are translucent, about 4 to 6 minutes.
  2. Add the tomato sauce, diced tomatoes, peppers, Barbecue Sauce, chicken broth and Worcestershire sauce. Bring to a boil, and then reduce the heat and simmer, stirring occasionally.
  3. Meanwhile, heat the ghee in a large skillet over medium heat and brown the beef and pork, breaking it up with a fork as it cooks, about 10 minutes.
  4. Add the liquid smoke, cayenne pepper and black pepper to the meat to season it as you brown it.
  5. Transfer the browned beef and pork to the pot with the sauce and then add the chicken and Cauliflower Rice. Simmer for 25 minutes.
  6. You can add hot sauce and salt and pepper, if desired, when serving.

NOTES: Browning the meat ahead of time will speed things up. Feel free to use leftover meats from other recipes. As a shortcut, you can sub store-bought barbecue sauce for homemade. Just read the label to avoid excess sugar and gluten.

HOW TO MAKE CAULIFLOWER RICE

Cauliflower “Rice” is one of our favorite Paleo cooking tricks. It’s healthy and delicious and incredibly easy to make. To start, prep your cauliflower, removing the green leaves and the core. Discard the leaves and core. Chop the cauliflower head into pieces that are small enough to fit into the feed tube of your food processor, and shred using the shred blade or pulse using the chopping blade until the cauliflower resembles small pieces of rice. (You can also shred the cauliflower by hand with a grater. You will want to keep your cauliflower pieces bigger, as they’re more manageable to grate that way.) It’s that simple! From there, you can steam the rice, fry the rice and serve it with dishes that call for rice.
