Avocado Dipping Sauce
1 medium ripe Hass avocado
Juice of 1 lime
1 clove garlic, peeled
1 tablespoon Dijon mustard
ВЅ teaspoon freshly ground black pepper
Вј teaspoon salt
2 to 4 tablespoons extra-virgin olive oil, as desired
- Halve the avocado, and remove the pit and peel.
- Place the avocado halves and the rest of the ingredients in a food processor or mini-blender and pulse until smooth and creamy.
- If you want this to have a thinner consistency, stir in the olive oil to thin it out so that it is more like a dressing than a dipping sauce.
- Serve as a spread, dip or dressing.
VARIATIONS: Other flavor considerations include chipotles, balsamic vinegar or rosemary. Be creative!
