Ingredients:
2 tbsps coconut oil
• 2 eggs
• 1 medium onion, sliced roughly
• 1 small carrot, sliced
• 1 large tomato, sliced
• 1-2 stalks of celery, chopped
• 1 small avocado, sliced
• 1 large broccoli, chopped
• baby spinach, chopped roughly
• 8 slices of ham
Directions:
1. Boil water in a deep pot.
2. Gently drop eggs into boiling water and wait for six minutes before turning stove off. Do not remove from boiling water.
3. Combine veggies in a large plate with ham.
4. Peel eggs and place one in the middle of the veggies
5. Add salt and pepper to taste
