PIE CRUST

Makes 1 pie crust

We’ve tried lots of different ways to make pie crusts and never found one to our liking. Some were too sweet, some were too flaky, some were even too difficult to make. One morning, Stacy woke up early and headed to the kitchen, determined to solve our pie crust dilemma. An hour later, she had invented a fantastic recipe! This is now our go-to crust.

INGREDIENTS

• 2 C almond flour
• ½ tsp baking soda
• ¼ tsp salt
• ½ C coconut oil, liquefied

INSTRUCTIONS AND HOW KIDS CAN HELP

1. Preheat oven to 350 degrees
2. In a mixing bowl, sift together flour, soda, and salt.
3. Add oil and use fork to incorporate.
4. Press into pie pan gently, no higher than top of the pan—if you press too hard into the pan, the dough will not release easily once fully cooked; try to move the dough with the palm of your hand, rather than pushing down on the dough.
5. Pierce several times with a fork and “pretty” your edges.
6. Bake for 10–12 minutes at 350 degrees.
